The farm “La Duchessa” was born during the 90’s thanks to the attentive mentor Ivano Cavallieri, from the “I pulisein”’s family, whose tradition of Balsamic Vinegar’s production has been handed down from generation to generation; Ivano still remembers with true affection his grandmother Isabella, who every year did the “religious ritual” of the must’s cooking.
Many year have passed, but the old method of the cooking remains unchanged.
Our Acetaia is in the high part of the house, where during summer the vinegar becomes thicker and concentrated; through the evaporation it enriches with the different flavours of the barrels’ woods; during winter the vinegar rests, waiting for the Christmas holiday when it is bottled and given as a precious gift.
Today, the Acetaia has about 220 barrels composed of different woods (oak, cherry-tree, chestnut, acacia, mulberry and juniper tree) and different shapes, to demonstrate the authenticity of the age of the barrels: some of them are more than 300 years old.
On the XXI century, surrounded by a world definitely technologic, the strength of our farm is in the traditional way we follow and look after the aging process of the Vinegar, using only grapes of our production. The only ingredient of our vinegar is the cooked must that comes from our vineyard of Trebbiano of Modena and Trebbiano of Spain’s grapes.
Our Balsamic “L’Asso di Maranello” is appreciated in Italy and abroad by loyal customers, who always demonstrate they estimate the excellent product and the elegant packages created with patience and love.
The Vinegar can be used on simple courses, such as pumpkin tortelloni, fillet or rice, or important and sophisticated dishes, such as oysters or fois gras.
Moreover, the farm “La Duchessa” produces the Lambrusco Grasparossa of Castelvetro, a sparkling wine with a ruby colour, particularly scented, with a dry or sweet flavour.
We wait for you in our little cellar with a bottle ready to be open, so you can taste the goodness of this wine, which is produced only in our areas, we wait.
